Sri Lankan Spicy Chicken Curry

This rich, aromatic chicken curry is the heart of many Sri Lankan meals. Using Delight Spicy Curry Powder and Chili Powder, this recipe offers a perfect balance of heat and flavor that will have your taste buds singing!

Ingredients:

  • 500g chicken, cut into pieces
  • 2 onions, sliced
  • 4 garlic cloves, minced
  • 1-inch ginger, minced
  • 1 tomato, chopped
  • 1 cinnamon stick
  • 1 tsp Delight Spicy Turmeric Powder
  • 2 tsp Delight Spicy Curry Powder
  • 1 tsp Delight Spicy Chili Powder
  • 1 tsp Delight Spicy Cumin Seeds
  • 2 green chilies, sliced
  • Curry leaves
  • Salt to taste
  • 1 cup coconut milk
  • 2 tbsp oil

Instructions:

  1. Heat oil in a large pan. Add Delight Spicy Cumin Seeds, cinnamon, and curry leaves. Fry for a minute until aromatic.
  2. Add the onions, garlic, and ginger. Sauté until golden brown.
  3. Toss in the chopped tomato, Delight Spicy Turmeric, Chili Powder, and Curry Powder. Let the mixture cook for a few minutes.
  4. Add the chicken pieces, green chilies, and salt. Stir well to coat the chicken with the spice mixture.
  5. Pour in coconut milk and let the curry simmer for 20-25 minutes until the chicken is tender and cooked through.
  6. Serve with steamed rice or roti for a truly comforting meal.
